Understanding the Basics of Latte Art


Some people say latte art is the art of painting on coffee. The craft began in the espresso bars of 1980s Italy, where baristas first started pouring steamed milk into rich shots of espresso to create simple hearts and elegant rosettas. What started as a quiet act of craftsmanship has since blossomed into a global phenomenon.


Before diving into complex designs, it’s essential to master the fundamentals. Latte art rests on two key elements: espresso quality and milk texture.


  • Espresso: Use freshly ground beans and a well-calibrated machine. A good shot should have a rich, golden crema, the silky layer on top that serves as your canvas. While crema is less critical for taste in modern brewing, it remains vital for successful latte art.

  • Milk: The milk must be steamed into microfoam, a smooth, velvety texture with tiny, even bubbles. This microfoam blends beautifully with the espresso crema to create clear, defined patterns. For basic latte art, aim for a milk temperature between 50°C and 60°C. Milk heated beyond 65°C can become stiff and difficult to pour.


Milk Steaming


Steaming milk is an art itself. Follow these steps to achieve the perfect microfoam:


  1. Start with cold milk in a chilled pitcher.

  2. Submerge the steam wand just below the surface and turn it on.

  3. Allow air to incorporate for 3-5 seconds, creating foam.

  4. Lower the pitcher to heat the milk evenly, aiming for 50-60°C.

  5. Stop steaming when the pitcher feels hot but not burning.

  6. Tap the pitcher on the counter and swirl the milk to remove large bubbles.


The result should be glossy, smooth milk that pours easily.

Mastering the Pour


Pouring is where your latte art truly comes to life. The goal is to control both the flow and direction of the milk.


Start by integrating the milk and espresso. Pour from about 10 cm above the cup so the foam sinks slightly, creating an even canvas. As the cup fills, gradually bring the pitcher closer and begin rotating the cup slowly. This controlled movement helps maintain the right distance and shape for your design.

1. Heart


The simplest and most iconic design. Tilt the cup at a 45-degree angle and pour steadily into the centre. When the cup is about three-quarters full, gently wiggle the pitcher from side to side, then finish by drawing a straight line through the middle to form the heart.

2. Rosetta
